Mussels in White Wine Garlic Sauce

Ingredients

  • 2 lbs fresh mussels, cleaned and debearded
  • 3 tablespoons butter
  • 6 cloves garlic, minced
  • 1 cup dry white wine
  • 1/2 cup chicken or seafood broth
  • 1/4 cup fresh parsley, chopped
  • 1/2 lemon, juiced
  • 1/2 teaspoon red pepper flakes
  • to taste salt and black pepper

Directions

  1. 1Melt butter in a large pot over medium heat and sauté minced garlic for about 1 minute until fragrant.
  2. 2Pour in white wine and broth, bringing to a simmer.
  3. 3Add the cleaned mussels to the pot, cover, and cook for 5-7 minutes, stirring occasionally, until the shells open.
  4. 4Discard any mussels that did not open.
  5. 5Stir in lemon juice, red pepper flakes, and most of the fresh parsley; season with salt and pepper to taste.
  6. 6Serve immediately in bowls with the broth, garnished with remaining parsley and crusty bread on the side.
