Mutton Curry

Tender mutton pieces slow-cooked in a rich, aromatic tomato-based curry with warm spices and coconut milk.

Ingredients

  • 750g mutton, cut into chunks
  • 2 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tomatoes, chopped
  • 2 teaspoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 200ml coconut milk
  • 400ml water or mutton broth
  • 1 bay leaf
  • to taste salt and pepper

Directions

  1. 1Heat oil in a large pot and sauté chopped onions until golden brown, about 5 minutes.
  2. 2Add minced garlic and ginger, cook for 1 minute until fragrant.
  3. 3Add mutton chunks and brown on all sides, approximately 5-7 minutes.
  4. 4Stir in curry powder, cumin, and coriander, coating the mutton evenly.
  5. 5Add chopped tomatoes and cook until they break down, about 3 minutes.
  6. 6Pour in coconut milk and water, add bay leaf, and bring to a boil.
  7. 7Reduce heat and simmer covered for 60-70 minutes until mutton is tender, stirring occasionally.
  8. 8Season with salt and pepper to taste and serve hot with rice or bread.
