Mutton Curry
Tender mutton pieces slow-cooked in a rich, aromatic tomato-based curry with warm spices and coconut milk.

Ingredients
- •750g mutton, cut into chunks
- •2 tablespoons vegetable oil
- •2 medium onions, finely chopped
- •4 cloves garlic, minced
- •1 tablespoon ginger, minced
- •2 tomatoes, chopped
- •2 teaspoons curry powder
- •1 teaspoon cumin
- •1 teaspoon coriander
- •200ml coconut milk
- •400ml water or mutton broth
- •1 bay leaf
- •to taste salt and pepper
Directions
- 1Heat oil in a large pot and sauté chopped onions until golden brown, about 5 minutes.
- 2Add minced garlic and ginger, cook for 1 minute until fragrant.
- 3Add mutton chunks and brown on all sides, approximately 5-7 minutes.
- 4Stir in curry powder, cumin, and coriander, coating the mutton evenly.
- 5Add chopped tomatoes and cook until they break down, about 3 minutes.
- 6Pour in coconut milk and water, add bay leaf, and bring to a boil.
- 7Reduce heat and simmer covered for 60-70 minutes until mutton is tender, stirring occasionally.
- 8Season with salt and pepper to taste and serve hot with rice or bread.
