Nacatamal (Nicaraguan Banana-Leaf Breakfast Tamal)
Nicaraguan banana-leaf tamales filled with seasoned pork, rice, potato, tomato, and olives in a rich corn masa.

Ingredients
- •4 cups masa harina
- •4 1/2 cups warm water
- •1 cup lard
- •2 tbsp achiote paste
- •2 tsp salt
- •2 lb pork shoulder, cut into 1-inch pieces
- •1 cup long-grain white rice, rinsed
- •2 medium potatoes, sliced
- •2 tomatoes, sliced
- •1 yellow onion, sliced
- •1/2 cup green olives
- •1/2 cup fresh mint leaves
- •8 large pieces banana leaves, softened over heat
Directions
- 1Mix masa harina, warm water, lard, achiote paste, and half the salt into a soft spreadable masa.
- 2Season the pork with the remaining salt and divide it into eight portions.
- 3Spread masa onto each banana leaf and add pork, rice, potato, tomato, onion, olives, and mint.
- 4Fold the banana leaves into tight rectangular packets and tie securely with kitchen twine.
- 5Place the nacatamales in a large pot, cover with water, and simmer gently for 2 1/2 hours.
- 6Drain the packets for 10 minutes before opening carefully and serving hot.
