Nam Pla (Thai Fish Sauce Dipping Sauce with Grilled Fish)

Ingredients
- •1.5 lbs whole fish (snapper or sea bass), cleaned and gutted
- •6 tablespoons fish sauce
- •3 tablespoons fresh lime juice
- •2 tablespoons palm sugar or brown sugar
- •2-3 Thai red chilies, sliced (or 1 teaspoon chili flakes)
- •3 cloves garlic, minced
- •2 tablespoons water
- •1/4 cup fresh cilantro, chopped
- •2 green onions, sliced
- •2 tablespoons vegetable oil
- •to taste salt and pepper
Directions
- 1Preheat grill or grill pan to medium-high heat. Pat the fish dry and season inside and out with salt, pepper, and a drizzle of oil.
- 2Grill the fish 4-5 minutes per side until the skin is crispy and flesh flakes easily with a fork.
- 3While fish cooks, make nam pla sauce by combining fish sauce, lime juice, palm sugar, water, minced garlic, and sliced chilies in a bowl.
- 4Stir the sauce well until the sugar dissolves, then taste and adjust seasonings as needed.
- 5Transfer the grilled fish to a serving plate and pour the nam pla sauce over it.
- 6Garnish with fresh cilantro and sliced green onions before serving.
- 7Serve hot with jasmine rice on the side, passing extra nam pla sauce at the table.
