Nam Prik Ong (Northern Thai Tomato-Chile Dip)

A thick northern Thai dip of pork and tomato cooked down with curry paste, scooped up with raw vegetables.

Ingredients

  • 300 g ground pork
  • 400 g canned tomatoes
  • 2 tbsp red curry paste
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 2 green onions, sliced

Directions

  1. 1Fry the red curry paste in a dry pan for two minutes until it darkens and smells fragrant.
  2. 2Add the ground pork, breaking it up well, and cook five minutes until no pink remains.
  3. 3Add the tomatoes and simmer fifteen minutes, stirring, until the mixture darkens and thickens.
  4. 4Season with the fish sauce and sugar.
  5. 5Simmer five minutes more until it is thick enough to hold on a piece of cucumber.
  6. 6Scatter the green onions over and serve warm with raw vegetables and sticky rice.

💡 Cook it further than feels necessary. Nam prik ong is a dip, not a sauce, and a loose one slides straight off the vegetables.
