Nasi Kuning (Indonesian Turmeric Coconut Rice)

Ingredients
- •2 cups jasmine rice
- •1 can (13.5 oz) coconut milk
- •1 1/2 cups water
- •1 tsp ground turmeric
- •1 pandan leaf, knotted
- •1 lemongrass stalk, bruised
- •1 tsp salt
- •3 eggs
- •1 tbsp vegetable oil
- •1 cucumber, sliced
- •1/2 cup roasted peanuts
- •1/3 cup fried shallots
Directions
- 1Rinse the jasmine rice until the water runs mostly clear, then drain well.
- 2Combine rice, coconut milk, water, turmeric, pandan, lemongrass, and salt in a saucepan.
- 3Bring to a boil, cover, reduce heat, and cook for 18 minutes.
- 4Beat the eggs and cook a thin omelette in vegetable oil, then roll and slice it.
- 5Rest the cooked rice covered for 5 minutes, then remove the pandan and lemongrass.
- 6Fluff the nasi kuning and serve with omelette, cucumber, peanuts, and fried shallots.
