Nasi Telur Kecap (Indonesian Soy Egg Rice)

Fried eggs over rice with sweet soy poured across, the cheapest good meal in Indonesia.

Ingredients

  • 300 g jasmine rice
  • 4 eggs
  • 3 tbsp sweet soy sauce
  • 1 tbsp neutral oil
  • 2 green onions, sliced

Directions

  1. 1Rinse the jasmine rice, then steam it fifteen minutes and leave it covered.
  2. 2Heat the oil in a wide pan until it is properly hot.
  3. 3Fry the eggs three minutes, spooning hot oil over the whites, until the edges are brown and frilled.
  4. 4Divide the rice between bowls and lay an egg on each.
  5. 5Spoon the sweet soy sauce over the egg and rice.
  6. 6Scatter the green onions and serve.

💡 The frilled brown edge is the point. A gently cooked egg here tastes of nothing against the sweet soy.
