Ingredients

  • 2 cups cooked short-grain Japanese rice, hot
  • 2 packs natto
  • 1 tsp karashi (Japanese mustard)
  • 2 tsp soy sauce
  • 1 green onion, thinly sliced
  • 1 nori sheet, finely shredded
  • 1 tsp sesame seeds

Directions

  1. 1Divide the hot short-grain rice between two bowls.
  2. 2Open the natto and stir it vigorously for 30–45 seconds until sticky and foamy.
  3. 3Mix karashi and soy sauce into the stirred natto until evenly seasoned.
  4. 4Spoon the natto over the hot rice, keeping it as the defining topping.
  5. 5Scatter green onion, shredded nori, and sesame seeds over each bowl.
  6. 6Serve immediately and stir the natto through the rice as you eat.

💡 Stir the natto before seasoning it; vigorous mixing develops the characteristic sticky strands and makes the texture lighter.
