Ndole

A savory Cameroonian dish of bitter leaves and ground nuts cooked with fish or meat in a rich, aromatic sauce.

Ingredients

  • 2 lbs bitter leaves (or spinach as substitute), chopped
  • 1 lb ground beef or fish fillets
  • 1 cup unsalted peanuts, ground or peanut butter
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 cups water or beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 Maggi cubes or bouillon cubes

Directions

  1. 1Heat oil in a large pot and sauté chopped onion and garlic until fragrant, about 2 minutes.
  2. 2Add ground meat and cook until browned, stirring occasionally, about 8 minutes.
  3. 3Stir in tomato paste and cook for 2 minutes to develop flavor.
  4. 4Add water or broth, bouillon cubes, salt, and pepper, then bring to a simmer.
  5. 5Stir in ground peanuts or peanut butter until well combined.
  6. 6Add chopped bitter leaves in batches, stirring to wilt them into the sauce, about 5 minutes.
  7. 7Simmer on low heat for 15-20 minutes until leaves are tender and sauce is thick and creamy.
  8. 8Adjust seasoning to taste and serve hot with rice or fufu.
