Ndole
A savory Cameroonian dish of bitter leaves and ground nuts cooked with fish or meat in a rich, aromatic sauce.

Ingredients
- •2 lbs bitter leaves (or spinach as substitute), chopped
- •1 lb ground beef or fish fillets
- •1 cup unsalted peanuts, ground or peanut butter
- •1 large onion, chopped
- •4 cloves garlic, minced
- •2 tbsp tomato paste
- •2 tbsp vegetable oil
- •2 cups water or beef broth
- •1 tsp salt
- •1/2 tsp black pepper
- •2 Maggi cubes or bouillon cubes
Directions
- 1Heat oil in a large pot and sauté chopped onion and garlic until fragrant, about 2 minutes.
- 2Add ground meat and cook until browned, stirring occasionally, about 8 minutes.
- 3Stir in tomato paste and cook for 2 minutes to develop flavor.
- 4Add water or broth, bouillon cubes, salt, and pepper, then bring to a simmer.
- 5Stir in ground peanuts or peanut butter until well combined.
- 6Add chopped bitter leaves in batches, stirring to wilt them into the sauce, about 5 minutes.
- 7Simmer on low heat for 15-20 minutes until leaves are tender and sauce is thick and creamy.
- 8Adjust seasoning to taste and serve hot with rice or fufu.
