Nigerian Masa (Fermented Rice Cakes)
Northern Nigerian fermented rice cakes cooked in small rounds until browned outside and soft inside, served as a savoury snack.

Ingredients
- •2 cups long-grain white rice
- •1/2 cup cooked white rice
- •1 1/2 cups warm water
- •1 tsp instant yeast
- •1 tsp granulated sugar
- •1/3 cup yellow onion, finely chopped
- •1 tsp salt
- •3 tbsp vegetable oil
Directions
- 1Cover the uncooked rice with water and soak it for 8 hours, then drain thoroughly.
- 2Blend the soaked rice, cooked rice, warm water, yeast, and sugar into a thick smooth batter.
- 3Cover and let the batter ferment for 1 hour until slightly risen and bubbly.
- 4Stir in chopped onion and salt.
- 5Heat a masa pan or lightly oiled skillet and spoon the batter into small thick rounds.
- 6Cook 3–4 minutes per side until browned and cooked through, adding oil between batches as needed.
💡 Including a little cooked rice in the batter helps create the soft interior while the soaked raw rice provides structure.
