Nigerian Meat Pies

Ingredients

  • 4 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1 tsp baking powder
  • 1 1/2 tsp salt
  • 3/4 cup cold water
  • 1 lb ground beef
  • 1 large potato, peeled and diced small
  • 1 large carrot, diced small
  • 1 medium yellow onion, diced
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 2 tbsp all-purpose flour for thickening
  • 1 egg, beaten

Directions

  1. 1Rub cold butter into flour, baking powder, and half the salt, then add water to form a firm dough.
  2. 2Cook beef and onion for 6 minutes, then add potato, carrot, thyme, curry powder, broth, and remaining salt.
  3. 3Simmer for 10 minutes, stir in thickening flour, and cool the filling for 10 minutes.
  4. 4Roll the dough and cut twelve circles.
  5. 5Fill, fold, and crimp each pie, then brush with beaten egg.
  6. 6Bake at 375°F (190°C) for 25 minutes until the crust is deeply golden.
