Nigerian Meat Pies

Ingredients
- •4 cups all-purpose flour
- •1 cup unsalted butter, cold and cubed
- •1 tsp baking powder
- •1 1/2 tsp salt
- •3/4 cup cold water
- •1 lb ground beef
- •1 large potato, peeled and diced small
- •1 large carrot, diced small
- •1 medium yellow onion, diced
- •1 cup beef broth
- •1 tsp dried thyme
- •1 tsp curry powder
- •2 tbsp all-purpose flour for thickening
- •1 egg, beaten
Directions
- 1Rub cold butter into flour, baking powder, and half the salt, then add water to form a firm dough.
- 2Cook beef and onion for 6 minutes, then add potato, carrot, thyme, curry powder, broth, and remaining salt.
- 3Simmer for 10 minutes, stir in thickening flour, and cool the filling for 10 minutes.
- 4Roll the dough and cut twelve circles.
- 5Fill, fold, and crimp each pie, then brush with beaten egg.
- 6Bake at 375°F (190°C) for 25 minutes until the crust is deeply golden.
