Nigerian Pepper Soup

Ingredients

  • 500g beef or goat meat, cubed
  • 3 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 red bell peppers
  • 3 Scotch bonnet peppers (or habanero)
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 6 cups beef stock
  • 2 carrots, diced
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • to taste salt and black pepper

Directions

  1. 1Heat oil in a large pot and sauté onions until translucent, about 3 minutes.
  2. 2Add beef cubes and brown on all sides, approximately 5 minutes.
  3. 3Stir in minced garlic and ginger, cooking for 1 minute until fragrant.
  4. 4Blend red peppers and Scotch bonnet peppers with 1 cup of water until smooth, then add to the pot.
  5. 5Pour in beef stock, add curry powder and thyme, then bring to a boil and reduce heat to simmer for 20 minutes.
  6. 6Add diced carrots and cook for another 10 minutes until meat is tender and vegetables are soft.
  7. 7Season with salt and pepper to taste and simmer for 2 more minutes before serving.
