Nigerian Pepper Soup

Ingredients
- •500g beef or goat meat, cubed
- •3 tablespoons vegetable oil
- •1 large onion, chopped
- •4 red bell peppers
- •3 Scotch bonnet peppers (or habanero)
- •4 cloves garlic, minced
- •1 tablespoon ginger, minced
- •6 cups beef stock
- •2 carrots, diced
- •1 teaspoon curry powder
- •1 teaspoon thyme
- •to taste salt and black pepper
Directions
- 1Heat oil in a large pot and sauté onions until translucent, about 3 minutes.
- 2Add beef cubes and brown on all sides, approximately 5 minutes.
- 3Stir in minced garlic and ginger, cooking for 1 minute until fragrant.
- 4Blend red peppers and Scotch bonnet peppers with 1 cup of water until smooth, then add to the pot.
- 5Pour in beef stock, add curry powder and thyme, then bring to a boil and reduce heat to simmer for 20 minutes.
- 6Add diced carrots and cook for another 10 minutes until meat is tender and vegetables are soft.
- 7Season with salt and pepper to taste and simmer for 2 more minutes before serving.
