Niku Tofu (Japanese Beef and Tofu Simmer)
Thin beef and tofu simmered in dashi, soy and mirin until the tofu is saturated and the onion collapses.

Ingredients
- •300 g beef sirloin steak, thinly sliced
- •400 g extra firm tofu, cut into cubes
- •1 large onion, sliced
- •60 ml soy sauce
- •60 ml mirin
- •1 tbsp sugar
- •250 ml dashi stock
Directions
- 1Press the tofu between paper towels for ten minutes, then cut into large cubes.
- 2Bring the dashi, soy sauce, mirin and sugar to a simmer in a wide pan.
- 3Add the sliced onion and cook eight minutes until translucent.
- 4Lay the beef into the liquid in a single layer and skim any foam that rises.
- 5Add the tofu, cover loosely, and simmer fifteen minutes at a bare bubble.
- 6Rest off the heat for five minutes before serving so the tofu draws in the broth.
💡 Keep it at a bare simmer. A hard boil tightens the beef and breaks the tofu into crumbs.
