Ingredients

  • 300 g beef sirloin steak, thinly sliced
  • 400 g extra firm tofu, cut into cubes
  • 1 large onion, sliced
  • 60 ml soy sauce
  • 60 ml mirin
  • 1 tbsp sugar
  • 250 ml dashi stock

Directions

  1. 1Press the tofu between paper towels for ten minutes, then cut into large cubes.
  2. 2Bring the dashi, soy sauce, mirin and sugar to a simmer in a wide pan.
  3. 3Add the sliced onion and cook eight minutes until translucent.
  4. 4Lay the beef into the liquid in a single layer and skim any foam that rises.
  5. 5Add the tofu, cover loosely, and simmer fifteen minutes at a bare bubble.
  6. 6Rest off the heat for five minutes before serving so the tofu draws in the broth.

💡 Keep it at a bare simmer. A hard boil tightens the beef and breaks the tofu into crumbs.
