Niratama (Japanese Garlic Chive Eggs)

Garlic chives folded through soft-scrambled egg, on the table in under ten minutes.

Ingredients

  • 6 eggs
  • 150 g garlic chives, cut into 5 cm lengths
  • 1 tbsp soy sauce
  • 1 tbsp neutral oil

Directions

  1. 1Beat the eggs with the soy sauce and a pinch of salt.
  2. 2Heat the oil in a wide pan over high heat until it shimmers.
  3. 3Add the garlic chives and stir-fry one minute until bright green and just wilted.
  4. 4Pour in the eggs and leave them for a few seconds to set at the base.
  5. 5Fold the egg over itself for two minutes until softly set but still glossy.
  6. 6Slide onto a plate and serve immediately.

💡 Take it off while it still looks slightly underdone. The residual heat in the pan finishes it on the way to the table.
