Nkatie Cake (Ghanaian Peanut Brittle)
Roasted peanuts set into dark caramel and broken into shards, sold in squares from roadside trays across Ghana.

Ingredients
- •250 g roasted peanuts
- •200 g sugar
- •2 tbsp water
Directions
- 1Line a tray with baking paper and have the peanuts weighed out beside the stove.
- 2Put the sugar and water in a heavy pan over medium heat and leave it alone as it melts.
- 3Cook eight minutes, swirling the pan rather than stirring, until the caramel turns deep amber.
- 4Take it off the heat and stir in the peanuts quickly and thoroughly.
- 5Tip onto the tray and press flat with the back of an oiled spoon.
- 6Cool thirty minutes until hard, then break into rough pieces.
💡 Have everything ready before the sugar goes on. Caramel moves from amber to burnt in about fifteen seconds and cannot be rescued.
