Nopales Guisados
Tender cactus paddles sautéed with tomatoes, onions, and jalapeños in a savory Mexican stew.

Ingredients
- •1 lb fresh nopales (cactus paddles), cleaned and diced
- •3 medium tomatoes, diced
- •1 large white onion, diced
- •2 cloves garlic, minced
- •2 jalapeños, sliced
- •2 tbsp vegetable oil
- •1 tsp dried oregano
- •½ tsp cumin
- •1 cup chicken or vegetable broth
- •¼ cup fresh cilantro, chopped
- •to taste salt and black pepper
Directions
- 1Heat oil in a large skillet over medium-high heat and sauté the diced onion and garlic until fragrant, about 2 minutes.
- 2Add the diced nopales and cook for 5 minutes, stirring occasionally, until they begin to release their liquid.
- 3Add the diced tomatoes, jalapeños, oregano, and cumin, then stir well to combine.
- 4Pour in the broth and bring to a simmer, then reduce heat to medium and cook for 15-18 minutes until nopales are tender.
- 5Season with salt and pepper to taste, then stir in the fresh cilantro.
- 6Serve hot as a main dish with warm tortillas or over rice.
