Nyama Choma
Succulent grilled meat marinated in aromatic spices and served with a tangy lime and cilantro finish.

Ingredients
- •2 lbs beef sirloin or lamb, cut into 2-inch cubes
- •3 tbsp olive oil
- •4 cloves garlic, minced
- •2 tbsp soy sauce
- •1 tbsp paprika
- •1 tsp ground cumin
- •1 tsp salt
- •½ tsp black pepper
- •2 limes, juiced
- •1 tbsp fresh cilantro, chopped
Directions
- 1Combine olive oil, minced garlic, soy sauce, paprika, cumin, salt, and pepper in a bowl.
- 2Add meat cubes to the marinade and toss to coat evenly. Marinate for at least 30 minutes.
- 3Thread marinated meat onto skewers, leaving small gaps between pieces.
- 4Heat grill or grill pan to high heat until very hot.
- 5Grill skewers for 10-12 minutes, turning occasionally, until meat is charred and cooked through.
- 6Remove from heat and squeeze fresh lime juice over the meat.
- 7Garnish with cilantro and serve hot with grilled vegetables or ugali on the side.
