Nyama Choma

Succulent grilled meat marinated in aromatic spices and served with a tangy lime and cilantro finish.

Ingredients

  • 2 lbs beef sirloin or lamb, cut into 2-inch cubes
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 limes, juiced
  • 1 tbsp fresh cilantro, chopped

Directions

  1. 1Combine olive oil, minced garlic, soy sauce, paprika, cumin, salt, and pepper in a bowl.
  2. 2Add meat cubes to the marinade and toss to coat evenly. Marinate for at least 30 minutes.
  3. 3Thread marinated meat onto skewers, leaving small gaps between pieces.
  4. 4Heat grill or grill pan to high heat until very hot.
  5. 5Grill skewers for 10-12 minutes, turning occasionally, until meat is charred and cooked through.
  6. 6Remove from heat and squeeze fresh lime juice over the meat.
  7. 7Garnish with cilantro and serve hot with grilled vegetables or ugali on the side.
