Japanese blanched spinach soaked briefly in a light dashi-soy dressing.

Ingredients

  • 1 lb fresh spinach
  • 1 cup dashi stock
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1/4 cup bonito flakes

Directions

  1. 1Blanch the spinach in boiling water for 30 seconds.
  2. 2Transfer the spinach to ice water, then squeeze it very dry.
  3. 3Cut the spinach into 2-inch lengths.
  4. 4Mix dashi stock, soy sauce, and mirin.
  5. 5Soak the spinach in the dressing for 5 minutes.
  6. 6Drain lightly, plate neatly, and top with bonito flakes.
