Ohitashi (Japanese Spinach in Dashi)
Japanese blanched spinach soaked briefly in a light dashi-soy dressing.

Ingredients
- •1 lb fresh spinach
- •1 cup dashi stock
- •2 tbsp soy sauce
- •1 tbsp mirin
- •1/4 cup bonito flakes
Directions
- 1Blanch the spinach in boiling water for 30 seconds.
- 2Transfer the spinach to ice water, then squeeze it very dry.
- 3Cut the spinach into 2-inch lengths.
- 4Mix dashi stock, soy sauce, and mirin.
- 5Soak the spinach in the dressing for 5 minutes.
- 6Drain lightly, plate neatly, and top with bonito flakes.
