Ingredients
- •1 lb Korean or Persian cucumbers, sliced 1/8 inch thick
- •1 tsp kosher salt
- •1 tbsp gochugaru
- •1 1/2 tbsp rice vinegar
- •1 tsp soy sauce
- •1 tsp sugar
- •1 clove garlic, finely grated
- •1 tsp toasted sesame oil
- •1 green onion, thinly sliced
- •1 tsp toasted sesame seeds
Directions
- 1Toss the sliced cucumbers with salt and let them stand 8 minutes; drain and squeeze gently to remove released water.
- 2Whisk gochugaru, rice vinegar, soy sauce, sugar, garlic, and sesame oil until the sugar dissolves.
- 3Toss the drained cucumbers with the dressing, green onion, and sesame seeds until evenly coated.
- 4Serve the dressed cucumbers immediately or chill them up to 30 minutes for a slightly softer, more seasoned texture.
💡 Dress this close to serving; even well-drained cucumbers keep releasing water and will dilute the gochugaru dressing over time.
