Okonomiyaki
A savory Japanese cabbage pancake loaded with tender vegetables and topped with rich sauce and creamy mayo.

Ingredients
- •2 cups shredded cabbage
- •1 cup all-purpose flour
- •3/4 cup water
- •2 eggs
- •2 slices bacon, chopped
- •1/4 cup pickled ginger
- •3 tablespoons okonomiyaki sauce
- •2 tablespoons mayonnaise
- •1 teaspoon bonito flakes
- •2 tablespoons vegetable oil
- •1/2 teaspoon salt
Directions
- 1Mix flour, water, and eggs in a bowl to create batter, then fold in shredded cabbage, bacon, and pickled ginger.
- 2Heat oil in a skillet over medium-high heat and pour the batter into a round pancake shape, about 1/2 inch thick.
- 3Cook for 5-6 minutes until the bottom is golden brown, then carefully flip and cook the other side for another 5 minutes.
- 4Transfer to a plate and drizzle with okonomiyaki sauce in a crisscross pattern, then add mayo on top.
- 5Sprinkle with bonito flakes, which will curl from the heat, and serve immediately.
