One-Pan Chicken Piccata with Green Beans

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 lb fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 3 tablespoons capers, drained
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped

Directions

  1. 1Mix flour, salt, and pepper in a shallow bowl. Pat chicken dry and coat both sides with the flour mixture.
  2. 2Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove and set aside.
  3. 3Add green beans to the same skillet and cook for 4-5 minutes, stirring occasionally. Add minced garlic and cook for 1 minute until fragrant.
  4. 4Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom. Add capers and stir well.
  5. 5Return chicken to the skillet and simmer for 2-3 minutes until heated through and sauce slightly reduces.
  6. 6Remove from heat and stir in butter until melted. Taste and adjust seasoning if needed.
  7. 7Divide among plates, garnish with fresh parsley, and serve immediately.
