One-Pan Chicken Piccata with Green Beans

Ingredients
- •1.5 lbs boneless, skinless chicken breasts
- •1/2 cup all-purpose flour
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •3 tablespoons olive oil
- •1 lb fresh green beans, trimmed
- •3 cloves garlic, minced
- •1/2 cup chicken broth
- •1/4 cup fresh lemon juice
- •3 tablespoons capers, drained
- •2 tablespoons butter
- •1 tablespoon fresh parsley, chopped
Directions
- 1Mix flour, salt, and pepper in a shallow bowl. Pat chicken dry and coat both sides with the flour mixture.
- 2Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove and set aside.
- 3Add green beans to the same skillet and cook for 4-5 minutes, stirring occasionally. Add minced garlic and cook for 1 minute until fragrant.
- 4Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom. Add capers and stir well.
- 5Return chicken to the skillet and simmer for 2-3 minutes until heated through and sauce slightly reduces.
- 6Remove from heat and stir in butter until melted. Taste and adjust seasoning if needed.
- 7Divide among plates, garnish with fresh parsley, and serve immediately.
