One-Pan Creamy Mushroom Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

  1. 1Heat butter and olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 5-6 minutes per side until golden brown. Remove and set aside.
  2. 2In the same skillet, sauté sliced mushrooms for 4-5 minutes until browned. Add minced garlic and cook for 1 minute until fragrant.
  3. 3Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Return chicken to the skillet.
  4. 4Reduce heat to medium-low and simmer for 8-10 minutes until chicken is cooked through, then remove chicken again.
  5. 5Stir in heavy cream and dried thyme, stirring until smooth. Simmer for 2-3 minutes to thicken slightly.
  6. 6Return chicken to the skillet and spoon sauce over top. Cook for 1-2 minutes until heated through.
  7. 7Taste and adjust seasonings with additional salt and pepper if needed. Garnish with fresh parsley and serve immediately.
