One-Pan Creamy Mushroom Chicken

Ingredients
- •4 boneless, skinless chicken breasts
- •2 tablespoons butter
- •1 tablespoon olive oil
- •8 oz mushrooms, sliced
- •3 cloves garlic, minced
- •1 cup heavy cream
- •1/2 cup chicken broth
- •1 teaspoon dried thyme
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •2 tablespoons fresh parsley, chopped
Directions
- 1Heat butter and olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 5-6 minutes per side until golden brown. Remove and set aside.
- 2In the same skillet, sauté sliced mushrooms for 4-5 minutes until browned. Add minced garlic and cook for 1 minute until fragrant.
- 3Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Return chicken to the skillet.
- 4Reduce heat to medium-low and simmer for 8-10 minutes until chicken is cooked through, then remove chicken again.
- 5Stir in heavy cream and dried thyme, stirring until smooth. Simmer for 2-3 minutes to thicken slightly.
- 6Return chicken to the skillet and spoon sauce over top. Cook for 1-2 minutes until heated through.
- 7Taste and adjust seasonings with additional salt and pepper if needed. Garnish with fresh parsley and serve immediately.
