One-Pan Sausage and Peppers

Ingredients
- •1 tablespoon olive oil
- •1 pound Italian sausage links
- •1 large red bell pepper, sliced
- •1 large yellow bell pepper, sliced
- •1 medium onion, sliced
- •4 cloves garlic, minced
- •1 can (14.5 oz) diced tomatoes
- •1 teaspoon dried Italian seasoning
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1/2 cup chicken broth
Directions
- 1Heat olive oil in a large skillet over medium-high heat and brown the sausage links on all sides, about 8-10 minutes. Remove and set aside.
- 2In the same skillet, add the sliced peppers and onion, sautéing for 5 minutes until softened.
- 3Add minced garlic and cook for 1 minute until fragrant.
- 4Stir in the diced tomatoes, Italian seasoning, salt, pepper, and chicken broth.
- 5Return the sausages to the skillet and nestle them into the sauce.
- 6Reduce heat to medium-low, cover, and simmer for 8-10 minutes until the sausages are cooked through and peppers are tender.
- 7Serve hot, optionally over pasta, rice, or crusty bread.
