Onigirazu (Japanese Rice Sandwich)
Japanese rice sandwich folded inside a full nori sheet with chicken, egg, lettuce, and carrot, then cut to reveal neat portable layers.

Ingredients
- •4 cups cooked short-grain Japanese rice, warm
- •4 nori sheets
- •12 oz boneless skinless chicken thighs, thinly sliced
- •2 tbsp soy sauce
- •1 tbsp mirin
- •1 tsp granulated sugar
- •2 eggs
- •4 lettuce leaves
- •1 medium carrot, cut into thin matchsticks
- •1 tbsp vegetable oil
Directions
- 1Cook chicken in oil over medium heat, then add soy sauce, mirin, and sugar and reduce until glossy.
- 2Beat the eggs, cook them as a thin omelette, and cut into four square portions.
- 3Place one nori sheet on plastic wrap with a corner pointing toward you and spread rice in a compact square at the centre.
- 4Layer lettuce, chicken, egg, and carrot over the rice, then cover with another thin layer of rice.
- 5Fold all four nori corners over the filling into a sealed parcel and wrap tightly for 5 minutes.
- 6Cut each parcel in half through the centre to expose the layers, then pack cut-side up.
💡 Keep the filling centred and compact; onigirazu should fold like a sandwich parcel rather than being shaped into a rice ball.
