Orange Chicken

Ingredients
- •2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- •1 cup all-purpose flour
- •2 eggs
- •1 cup fresh orange juice
- •3 tbsp soy sauce
- •2 tbsp sugar
- •1 tbsp rice vinegar
- •2 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •1 tsp red pepper flakes
- •2 tbsp cornstarch
- •vegetable oil for frying
Directions
- 1Beat eggs in a bowl, then dredge chicken pieces in flour, dip in egg, and coat again in flour.
- 2Heat oil in a large skillet over medium-high heat and fry chicken until golden, about 8-10 minutes; set aside.
- 3In a small bowl, whisk together orange juice, soy sauce, sugar, vinegar, garlic, ginger, and red pepper flakes.
- 4Mix cornstarch with 2 tablespoons water, then stir into the orange sauce mixture.
- 5Pour sauce into the skillet over medium heat, stirring until thickened, about 3-4 minutes.
- 6Return chicken to the skillet and toss to coat evenly with sauce; simmer for 2 minutes.
- 7Serve over steamed rice or noodles, garnished with orange zest if desired.
