Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup fresh orange juice
  • 3 tbsp soy sauce
  • 2 tbsp sugar
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp red pepper flakes
  • 2 tbsp cornstarch
  • vegetable oil for frying

Directions

  1. 1Beat eggs in a bowl, then dredge chicken pieces in flour, dip in egg, and coat again in flour.
  2. 2Heat oil in a large skillet over medium-high heat and fry chicken until golden, about 8-10 minutes; set aside.
  3. 3In a small bowl, whisk together orange juice, soy sauce, sugar, vinegar, garlic, ginger, and red pepper flakes.
  4. 4Mix cornstarch with 2 tablespoons water, then stir into the orange sauce mixture.
  5. 5Pour sauce into the skillet over medium heat, stirring until thickened, about 3-4 minutes.
  6. 6Return chicken to the skillet and toss to coat evenly with sauce; simmer for 2 minutes.
  7. 7Serve over steamed rice or noodles, garnished with orange zest if desired.
