Orange Salad with Almonds and Red Onion

Ingredients
- •6 cups mixed salad greens or spinach
- •3 medium oranges, peeled and segmented
- •1/2 red onion, thinly sliced
- •1/2 cup sliced almonds, toasted
- •1/4 cup fresh mint leaves, chopped
- •3 tablespoons olive oil
- •1.5 tablespoons fresh orange juice
- •1 tablespoon red wine vinegar
- •1 teaspoon Dijon mustard
- •1/4 teaspoon salt
- •1/8 teaspoon black pepper
Directions
- 1Toast the sliced almonds in a dry pan over medium heat for 2-3 minutes until fragrant, then set aside.
- 2In a small bowl, whisk together olive oil, orange juice, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
- 3Place the mixed greens in a large salad bowl and toss with the dressing.
- 4Top the greens with orange segments, red onion slices, toasted almonds, and fresh mint.
