Ingredients

  • 6 cups mixed salad greens or spinach
  • 3 medium oranges, peeled and segmented
  • 1/2 red onion, thinly sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons olive oil
  • 1.5 tablespoons fresh orange juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Directions

  1. 1Toast the sliced almonds in a dry pan over medium heat for 2-3 minutes until fragrant, then set aside.
  2. 2In a small bowl, whisk together olive oil, orange juice, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
  3. 3Place the mixed greens in a large salad bowl and toss with the dressing.
  4. 4Top the greens with orange segments, red onion slices, toasted almonds, and fresh mint.
  5. 5Toss gently to combine and serve immediately.
