Ovos Mexidos com Farinheira

Ingredients
- •1 link farinheira (Portuguese pork sausage)
- •6 eggs
- •1 tbsp olive oil
- •2 tbsp fresh parsley, chopped
- •1/4 tsp black pepper
Directions
- 1Remove the farinheira casing and break the sausage filling into small pieces.
- 2Heat olive oil in a skillet and cook the farinheira for 5 minutes until browned at the edges.
- 3Beat the eggs with black pepper while the sausage cooks.
- 4Lower the heat and pour the beaten eggs over the farinheira.
- 5Fold the eggs gently for 2–3 minutes until softly set but still moist.
- 6Remove from heat, stir in parsley, and serve immediately.
💡 Do not salt the eggs before tasting; farinheira is highly seasoned and usually provides enough salt for the entire dish.
