Pão de Deus (Portuguese Coconut Breakfast Roll)
Portuguese soft rolls topped with a sweet coconut-egg mixture that bakes into a golden crown.

Ingredients
- •4 cups all-purpose flour
- •2 tsp instant yeast
- •1 1/4 cups whole milk, warm
- •1/3 cup granulated sugar
- •4 tbsp unsalted butter, softened
- •2 eggs
- •1 tsp salt
- •1 cup unsweetened shredded coconut
- •1 egg yolk
- •2 tbsp powdered sugar
Directions
- 1Mix flour, yeast, milk, sugar, butter, one egg, and salt into a soft dough.
- 2Knead for 8 minutes, cover, and let rise for 60 minutes.
- 3Divide the dough into eight rounds and place on a lined baking sheet.
- 4Mix coconut, remaining egg, and egg yolk into a thick topping.
- 5Spread coconut topping over each roll and bake at 375°F (190°C) for 20–25 minutes.
- 6Cool slightly and dust with powdered sugar.
