Ingredients

  • •2 tablespoons vegetable oil
  • •4 cloves garlic, minced
  • •2-3 Thai red chilies, sliced
  • •300 grams ground chicken
  • •3 tablespoons fish sauce
  • •1 tablespoon soy sauce
  • •1 teaspoon sugar
  • •1 cup fresh holy basil leaves
  • •2 eggs
  • •2 cups cooked jasmine rice

Directions

  1. 1Heat 1 tablespoon oil in a wok or large skillet over high heat.
  2. 2Add minced garlic and sliced chilies, stir-fry for 30 seconds until fragrant.
  3. 3Add ground chicken and cook, breaking it apart, for 3-4 minutes until cooked through.
  4. 4Stir in fish sauce, soy sauce, and sugar, mixing well for 1 minute.
  5. 5Add fresh holy basil leaves and toss gently for 30 seconds, then transfer to a plate.
  6. 6In the same pan, add remaining oil and fry eggs sunny-side up until whites are set.
  7. 7Serve chicken mixture over jasmine rice with a fried egg on top.

💡 Pad grapow gai is at its best when the ground chicken browns before sauces go in; adding liquid too early creates a pale, steamed mince.
