Pad Khing
A fragrant Thai stir-fry of tender pork or chicken with fresh ginger, garlic, and chilies served over jasmine rice.

Ingredients
- •300g pork or chicken, thinly sliced
- •3 tablespoons fresh ginger, julienned
- •4 cloves garlic, minced
- •2 red chilies, sliced
- •3 tablespoons soy sauce
- •1 tablespoon oyster sauce
- •1 tablespoon fish sauce
- •2 tablespoons vegetable oil
- •1 cup green beans, cut into 2-inch pieces
- •1/2 cup chicken or vegetable broth
- •1 teaspoon sugar
- •handful fresh basil leaves
Directions
- 1Heat oil in a wok or large skillet over high heat until shimmering.
- 2Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- 3Add sliced meat and stir-fry for 2-3 minutes until nearly cooked through.
- 4Add green beans and chilies, stir-fry for 2 minutes.
- 5Pour in soy sauce, oyster sauce, fish sauce, sugar, and broth; stir well.
- 6Simmer for 3-4 minutes until sauce thickens and green beans are tender-crisp.
- 7Remove from heat and stir in fresh basil leaves.
- 8Serve immediately over jasmine rice.
