Pad Krapow Moo

A vibrant and aromatic Thai stir-fry with ground pork, fresh holy basil, and chilies served over jasmine rice.

Ingredients

  • 2 tablespoons vegetable oil
  • 300 grams ground pork
  • 3 cloves garlic, minced
  • 2-3 Thai red chilies, sliced
  • 1 cup fresh holy basil leaves
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 cup chicken broth
  • 2 eggs eggs
  • 2 cups cooked jasmine rice

Directions

  1. 1Heat oil in a wok or large skillet over high heat.
  2. 2Add minced garlic and chilies, stir-fry for 30 seconds until fragrant.
  3. 3Add ground pork and stir-fry, breaking it apart, until cooked through (about 5 minutes).
  4. 4Add fish sauce, soy sauce, sugar, and chicken broth, then stir well and simmer for 2 minutes.
  5. 5Remove from heat and stir in fresh holy basil leaves.
  6. 6Divide jasmine rice between plates and top with the pork mixture.
  7. 7Fry eggs sunny-side up in the same pan and place one on top of each serving.
