Pad Krapow Moo
A vibrant and aromatic Thai stir-fry with ground pork, fresh holy basil, and chilies served over jasmine rice.

Ingredients
- •2 tablespoons vegetable oil
- •300 grams ground pork
- •3 cloves garlic, minced
- •2-3 Thai red chilies, sliced
- •1 cup fresh holy basil leaves
- •3 tablespoons fish sauce
- •1 tablespoon soy sauce
- •1 teaspoon sugar
- •1/2 cup chicken broth
- •2 eggs eggs
- •2 cups cooked jasmine rice
Directions
- 1Heat oil in a wok or large skillet over high heat.
- 2Add minced garlic and chilies, stir-fry for 30 seconds until fragrant.
- 3Add ground pork and stir-fry, breaking it apart, until cooked through (about 5 minutes).
- 4Add fish sauce, soy sauce, sugar, and chicken broth, then stir well and simmer for 2 minutes.
- 5Remove from heat and stir in fresh holy basil leaves.
- 6Divide jasmine rice between plates and top with the pork mixture.
- 7Fry eggs sunny-side up in the same pan and place one on top of each serving.
