Pad Krapow Moo (Thai Basil Pork Stir-Fry)

Ingredients
- •3 tablespoons vegetable oil
- •8 cloves garlic, minced
- •1-2 red Thai chilies, minced
- •300 grams ground pork
- •3 tablespoons fish sauce
- •1 tablespoon soy sauce
- •1 teaspoon sugar
- •1/2 cup fresh Thai basil leaves
- •1/4 cup chicken broth
- •2 eggs
Directions
- 1Heat oil in a wok or large skillet over high heat until shimmering.
- 2Add minced garlic and chilies, stir-fry for 30 seconds until fragrant.
- 3Add ground pork and stir-fry, breaking it up with a spoon, until cooked through (about 5 minutes).
- 4Add fish sauce, soy sauce, and sugar, stirring to combine.
- 5Pour in chicken broth and simmer for 2 minutes.
- 6Tear in fresh Thai basil leaves and toss to combine, cooking for 1 minute.
- 7Push the pork mixture to the side, crack eggs into the pan and scramble them lightly, then mix with the pork.
- 8Serve hot over jasmine rice with a fried egg on top if desired.
