Ingredients

  • 3 tablespoons vegetable oil
  • 8 cloves garlic, minced
  • 1-2 red Thai chilies, minced
  • 300 grams ground pork
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 cup fresh Thai basil leaves
  • 1/4 cup chicken broth
  • 2 eggs

Directions

  1. 1Heat oil in a wok or large skillet over high heat until shimmering.
  2. 2Add minced garlic and chilies, stir-fry for 30 seconds until fragrant.
  3. 3Add ground pork and stir-fry, breaking it up with a spoon, until cooked through (about 5 minutes).
  4. 4Add fish sauce, soy sauce, and sugar, stirring to combine.
  5. 5Pour in chicken broth and simmer for 2 minutes.
  6. 6Tear in fresh Thai basil leaves and toss to combine, cooking for 1 minute.
  7. 7Push the pork mixture to the side, crack eggs into the pan and scramble them lightly, then mix with the pork.
  8. 8Serve hot over jasmine rice with a fried egg on top if desired.
