Pad Tua Ngok (Thai Stir-Fried Bean Sprouts)

Bean sprouts hit hard and fast in a screaming pan so they wilt at the edges and stay squeaky in the middle.

Ingredients

  • 400 g bean sprouts
  • 3 green onions, cut into 5 cm pieces
  • 1 tbsp fish sauce
  • 1 tbsp neutral oil
  • 1 tsp sugar

Directions

  1. 1Rinse the bean sprouts and drain them thoroughly. Any clinging water will steam them.
  2. 2Mix the fish sauce and sugar in a small bowl so it goes in as one addition.
  3. 3Heat the oil in a wok over the highest heat until it shimmers and moves freely.
  4. 4Add the bean sprouts and green onions and toss constantly for ninety seconds.
  5. 5Pour the sauce down the side of the wok and toss twice more.
  6. 6Tip onto a plate immediately.

💡 This is a two-minute dish and it does not wait. Sprouts left in a warm pan keep cooking and collapse into water.
