Palacintas

Delicate Eastern European crêpes rolled with jam, Nutella, or sour cream and fruit, perfect for a sweet breakfast or dessert.

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1/2 cup apricot jam
  • 1/4 cup sour cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. 1Combine flour and eggs in a large mixing bowl, then gradually add milk and water, stirring to create a smooth batter.
  2. 2Add salt, vanilla extract, and melted butter to the batter and mix until well combined.
  3. 3Heat a lightly buttered non-stick skillet over medium-high heat and pour 1/4 cup batter, tilting pan to spread thinly into a crêpe.
  4. 4Cook for about 1-2 minutes until the bottom is light golden, flip carefully, and cook the other side for 30 seconds; repeat with remaining batter.
  5. 5Spread 1-2 tablespoons of jam and a dollop of sour cream on the cooked side of each palacintas.
  6. 6Roll tightly and arrange on a serving plate, dust with powdered sugar, and serve warm.
