Palaver Sauce
A rich and savory West African stew combining leafy greens, tender meat, and creamy peanut sauce.

Ingredients
- •2 pounds beef or lamb, cubed
- •1 large bunch spinach or collard greens, chopped
- •1 medium onion, diced
- •4 cloves garlic, minced
- •3 tablespoons peanut butter
- •2 cups beef or vegetable broth
- •1 can (14 oz) diced tomatoes
- •2 tablespoons vegetable oil
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1/2 teaspoon cayenne pepper
Directions
- 1Heat oil in a large pot over medium-high heat and brown the cubed meat on all sides, about 8 minutes. Remove and set aside.
- 2In the same pot, sauté diced onion and garlic until softened, about 3 minutes.
- 3Add the browned meat back to the pot along with broth, tomatoes, salt, pepper, and cayenne. Bring to a boil, then reduce heat and simmer for 20 minutes until meat is tender.
- 4Stir in the peanut butter until fully incorporated into the sauce.
- 5Add the chopped greens to the pot and stir well, cooking for 5-7 minutes until wilted and heated through.
- 6Taste and adjust seasonings as needed, then serve hot over rice.
