Pan con Tomate with Cured Ham

Crispy toasted bread rubbed with fresh tomato and garlic, drizzled with olive oil, and topped with slices of jamón ibérico for a classic Spanish appetizer or light meal.

Ingredients

  • 4 slices rustic bread or ciabatta
  • 2 medium ripe tomatoes
  • 2 cloves garlic
  • 4 tablespoons extra virgin olive oil
  • 6 slices cured ham (jamón ibérico or prosciutto)
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper

Directions

  1. 1Toast the bread slices in a toaster or under a broiler until golden and crispy on both sides.
  2. 2Cut the garlic cloves in half and rub the cut side vigorously over the surface of each warm toast slice.
  3. 3Cut the ripe tomatoes in half and rub the cut side of the tomato over the garlic-rubbed toast, allowing the juice and pulp to soak into the bread.
  4. 4Drizzle each slice generously with extra virgin olive oil.
  5. 5Sprinkle with sea salt and black pepper to taste.
  6. 6Top each slice with folded or crumpled slices of cured ham.
  7. 7Serve immediately while the bread is still warm.
