Pan de Bono (Colombian Cheese Bread)

Tapioca starch and fresh cheese baked into hollow rings that go crisp outside and stay stretchy within.

Ingredients

  • 250 g tapioca starch
  • 120 g maize meal
  • 200 g queso fresco, grated
  • 1 large egg
  • 120 ml milk

Directions

  1. 1Heat the oven to 220C and line a tray.
  2. 2Mix the tapioca starch, maize meal and grated queso fresco in a bowl.
  3. 3Add the egg and the milk and work it into a smooth, slightly tacky dough.
  4. 4If it cracks when you bend it, add milk a spoonful at a time until it holds.
  5. 5Shape into rings or small balls and space them well apart on the tray.
  6. 6Bake eighteen minutes until puffed and golden in patches, and eat while warm.

💡 They are only good hot. Pan de bono turns dense within an hour, so bake them for the moment you want them.
