Ingredients

  • •4 fillets Atlantic salmon fillet
  • •1 can canned tomatoes
  • •4 cloves garlic
  • •3 tbsp olive oil
  • •1/4 cup parsley
  • •1/2 tsp dried basil
  • •to taste salt and pepper

Directions

  1. 1Season salmon fillets with salt, pepper, and dried basil.
  2. 2Sear salmon in 2 tbsp hot olive oil, 3 minutes per side, then set aside.
  3. 3In same pan, sauté minced garlic in remaining oil for 1 minute.
  4. 4Add canned tomatoes, season, and simmer 8 minutes until thickened.
  5. 5Return salmon to pan and warm through for 2 minutes.
  6. 6Garnish with chopped parsley and serve immediately.

💡 Sear salmon first and build the tomato-garlic sauce around it afterward; prolonged simmering in tomatoes can dry the fillets before the sauce reduces.
