Paneer Bhurji (Indian Scrambled Paneer)
Crumbled paneer tossed through spiced onion and tomato until it scrambles, ready in the time it takes to warm bread.

Ingredients
- •400 g paneer, crumbled
- •1 small onion, finely chopped
- •2 tomatoes, chopped
- •1 green chili, minced
- •1/2 tsp turmeric
- •1 tsp cumin
- •2 tbsp cilantro, chopped
- •1 tbsp neutral oil
Directions
- 1Heat the oil and add the cumin. Wait until the seeds darken and smell toasted.
- 2Add the onion and green chili and fry six minutes until the edges colour.
- 3Add the tomatoes and turmeric with a good pinch of salt.
- 4Cook eight minutes until the tomato breaks down and the oil separates at the edges.
- 5Fold in the crumbled paneer and warm through for two minutes only.
- 6Take off the heat, stir in the cilantro, and serve.
💡 Two minutes is the whole cooking time for the paneer. Longer and it squeaks and goes rubbery instead of staying soft.
