Panko Crusted Chicken Panini

Ingredients

- •1 cup panko breadcrumbs
- •2 large eggs

- •4 slices provolone cheese
- •4 slices ciabatta or panini bread
- •1/2 cup roasted red peppers
- •2 tablespoons olive oil
- •2 tablespoons butter
Directions
- 1Pound chicken breasts to 1/2-inch thickness. Set up three shallow bowls with flour, beaten eggs, and panko mixed with salt and pepper.
- 2Coat each chicken breast in flour, then egg, then panko, pressing gently so coating adheres.
- 3Heat olive oil in a large skillet over medium-high heat and cook breaded chicken for 6-7 minutes per side until golden and internal temperature reaches 165°F. Set aside.
- 4Slice ciabatta bread and layer with provolone cheese, roasted red peppers, and crispy chicken on each sandwich.
- 5Heat a panini press or skillet over medium heat with butter. Cook sandwiches for 3-4 minutes until bread is golden and cheese melts, pressing gently if using a skillet.
- 6Remove from heat, let cool for 1 minute, cut diagonally, and serve hot.
