Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices provolone cheese
  • 4 slices ciabatta or panini bread
  • 1/2 cup roasted red peppers
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Directions

  1. 1Pound chicken breasts to 1/2-inch thickness. Set up three shallow bowls with flour, beaten eggs, and panko mixed with salt and pepper.
  2. 2Coat each chicken breast in flour, then egg, then panko, pressing gently so coating adheres.
  3. 3Heat olive oil in a large skillet over medium-high heat and cook breaded chicken for 6-7 minutes per side until golden and internal temperature reaches 165°F. Set aside.
  4. 4Slice ciabatta bread and layer with provolone cheese, roasted red peppers, and crispy chicken on each sandwich.
  5. 5Heat a panini press or skillet over medium heat with butter. Cook sandwiches for 3-4 minutes until bread is golden and cheese melts, pressing gently if using a skillet.
  6. 6Remove from heat, let cool for 1 minute, cut diagonally, and serve hot.
