Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2.5 teaspoons gelatin powder
  • 3 tablespoons cold water
  • pinch salt
  • 1/2 cup berry compote or fruit sauce

Directions

  1. 1Bloom the gelatin by sprinkling it over cold water and letting it sit for 5 minutes until spongy.
  2. 2Heat the cream, milk, sugar, and salt in a saucepan over medium heat, stirring occasionally until steam rises, but do not boil.
  3. 3Remove from heat, add the bloomed gelatin and vanilla extract, stirring until gelatin is completely dissolved.
  4. 4Pour the mixture through a fine-mesh strainer into a bowl to remove any lumps.
  5. 5Divide the mixture evenly among four serving glasses or ramekins and refrigerate for at least 4 hours or until set.
  6. 6Top each panna cotta with a spoonful of berry compote or fruit sauce before serving.
