Panna Cotta

Ingredients
- •2 cups heavy cream
- •1 cup whole milk
- •1/2 cup granulated sugar
- •1 teaspoon vanilla extract
- •2.5 teaspoons gelatin powder
- •3 tablespoons cold water
- •pinch salt
- •1/2 cup berry compote or fruit sauce
Directions
- 1Bloom the gelatin by sprinkling it over cold water and letting it sit for 5 minutes until spongy.
- 2Heat the cream, milk, sugar, and salt in a saucepan over medium heat, stirring occasionally until steam rises, but do not boil.
- 3Remove from heat, add the bloomed gelatin and vanilla extract, stirring until gelatin is completely dissolved.
- 4Pour the mixture through a fine-mesh strainer into a bowl to remove any lumps.
- 5Divide the mixture evenly among four serving glasses or ramekins and refrigerate for at least 4 hours or until set.
- 6Top each panna cotta with a spoonful of berry compote or fruit sauce before serving.
