Ingredients

  • 1 pound ripe tomatoes, cut into chunks
  • 4 cups day-old bread, cubed
  • 1 medium red onion, thinly sliced
  • 1 bunch fresh basil, torn
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • to taste salt and black pepper

Directions

  1. 1Cut day-old bread into cubes and lightly toast in a dry skillet until golden, about 5 minutes.
  2. 2Combine tomatoes, onion, and toasted bread cubes in a large bowl.
  3. 3Whisk together olive oil, vinegar, garlic, salt, and pepper in a small bowl.

  5. 5Let sit for 10 minutes to allow flavors to meld and bread to absorb the dressing.
