Papa a la Huancaína
A creamy Peruvian classic of tender potatoes smothered in a rich, spiced yellow cheese sauce with a hint of heat.

Ingredients
- •2 lbs yellow potatoes
- •8 oz queso fresco or feta cheese
- •1 cup heavy cream
- •3 aji amarillo peppers (or 2 tbsp aji amarillo paste)
- •3 cloves garlic
- •1/3 cup saltine crackers or bread
- •2 tbsp vegetable oil
- •1/2 cup milk
- •2 hard boiled eggs
- •1/4 cup black olives
- •to taste salt and pepper
Directions
- 1Boil potatoes in salted water until tender, about 20 minutes. Drain and peel when cool.
- 2Blend aji amarillo peppers, garlic, crackers, cheese, cream, and milk until smooth. Heat oil in a pan and cook the sauce over medium heat for 3-4 minutes, stirring constantly. Season with salt and pepper.
- 3Arrange boiled potatoes on a serving platter and pour the warm sauce over them.
- 4Garnish with sliced hard boiled eggs and black olives. Serve warm.
