Papa a la Huancaína

A creamy Peruvian classic of tender potatoes smothered in a rich, spiced yellow cheese sauce with a hint of heat.

Ingredients

  • 2 lbs yellow potatoes
  • 8 oz queso fresco or feta cheese
  • 1 cup heavy cream
  • 3 aji amarillo peppers (or 2 tbsp aji amarillo paste)
  • 3 cloves garlic
  • 1/3 cup saltine crackers or bread
  • 2 tbsp vegetable oil
  • 1/2 cup milk
  • 2 hard boiled eggs
  • 1/4 cup black olives
  • to taste salt and pepper

Directions

  1. 1Boil potatoes in salted water until tender, about 20 minutes. Drain and peel when cool.
  2. 2Blend aji amarillo peppers, garlic, crackers, cheese, cream, and milk until smooth. Heat oil in a pan and cook the sauce over medium heat for 3-4 minutes, stirring constantly. Season with salt and pepper.
  3. 3Arrange boiled potatoes on a serving platter and pour the warm sauce over them.
  4. 4Garnish with sliced hard boiled eggs and black olives. Serve warm.
