Papas con Rajas (Mexican Potatoes with Poblano)

Fried potatoes with roasted poblano strips and crema, soft and mild with a slow warmth behind it.

Ingredients

  • 700 g potatoes, cubed
  • 2 poblano peppers, roasted and sliced
  • 1 small onion, sliced
  • 120 ml crema
  • 1 tbsp neutral oil

Directions

  1. 1Char the poblanos directly over a flame for ten minutes, turning, until blackened all over.
  2. 2Put them in a covered bowl to steam, then rub off the skins and slice into strips.
  3. 3Fry the cubed potatoes in the oil for twelve minutes until golden and tender through.
  4. 4Add the onion and cook five minutes until soft.
  5. 5Stir in the poblano strips and season well.
  6. 6Take off the heat, fold through the crema, and serve warm.

💡 Add the crema off the heat. Boiled crema splits and the dish turns grainy instead of silky.
