Papas con Rajas (Mexican Potatoes with Poblano)
Fried potatoes with roasted poblano strips and crema, soft and mild with a slow warmth behind it.

Ingredients
- •700 g potatoes, cubed
- •2 poblano peppers, roasted and sliced
- •1 small onion, sliced
- •120 ml crema
- •1 tbsp neutral oil
Directions
- 1Char the poblanos directly over a flame for ten minutes, turning, until blackened all over.
- 2Put them in a covered bowl to steam, then rub off the skins and slice into strips.
- 3Fry the cubed potatoes in the oil for twelve minutes until golden and tender through.
- 4Add the onion and cook five minutes until soft.
- 5Stir in the poblano strips and season well.
- 6Take off the heat, fold through the crema, and serve warm.
💡 Add the crema off the heat. Boiled crema splits and the dish turns grainy instead of silky.
