Papaya Salad with Shrimp

Ingredients
- •1 medium green papaya, shredded
- •1 pound large shrimp, peeled and deveined
- •3 cloves garlic, minced
- •2-3 Thai chilies, chopped
- •1/4 cup fresh lime juice
- •3 tablespoons fish sauce
- •1 tablespoon palm sugar or brown sugar
- •1/4 cup roasted peanuts, crushed
- •1/2 cup cherry tomatoes, halved
- •1/4 cup fresh cilantro, chopped
- •2 tablespoons vegetable oil
Directions
- 1Heat oil in a large pan over high heat and cook shrimp until pink and cooked through, about 3-4 minutes per side. Set aside and cool slightly.
- 2In a large mortar and pestle, pound garlic and chilies together until fragrant and partially crushed.
- 3Add the shredded papaya to the mortar and gently bruise it with the pestle to release flavors, about 1 minute.
- 4In a small bowl, whisk together lime juice, fish sauce, and palm sugar until the sugar dissolves.
- 5Transfer the papaya mixture to a large serving bowl and add the cooked shrimp, cherry tomatoes, and cilantro.
- 6Pour the lime dressing over the salad and toss gently to combine.
- 7Top with crushed roasted peanuts and serve immediately while still crisp and fresh.
