Papaya Salad with Shrimp

Ingredients

  • 1 medium green papaya, shredded
  • 1 pound large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2-3 Thai chilies, chopped
  • 1/4 cup fresh lime juice
  • 3 tablespoons fish sauce
  • 1 tablespoon palm sugar or brown sugar
  • 1/4 cup roasted peanuts, crushed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons vegetable oil

Directions

  1. 1Heat oil in a large pan over high heat and cook shrimp until pink and cooked through, about 3-4 minutes per side. Set aside and cool slightly.
  2. 2In a large mortar and pestle, pound garlic and chilies together until fragrant and partially crushed.
  3. 3Add the shredded papaya to the mortar and gently bruise it with the pestle to release flavors, about 1 minute.
  4. 4In a small bowl, whisk together lime juice, fish sauce, and palm sugar until the sugar dissolves.
  5. 5Transfer the papaya mixture to a large serving bowl and add the cooked shrimp, cherry tomatoes, and cilantro.
  6. 6Pour the lime dressing over the salad and toss gently to combine.
  7. 7Top with crushed roasted peanuts and serve immediately while still crisp and fresh.
