Parmesan-Crusted Salmon with Spinach

Ingredients

  • 4 fillets (6 oz each) salmon
  • 3/4 cup Parmesan, finely grated
  • 2 tbsp butter, melted
  • 1/2 tsp red chili flakes
  • 1/4 cup dry white wine
  • 5 oz spinach, fresh
  • 2 tbsp ghee or oil

Directions

  1. 1Preheat oven to 425°F and line a baking sheet with foil.
  2. 2Drizzle ghee over spinach on baking sheet, season with salt and pepper.
  3. 3Nestle salmon fillets over spinach and pour white wine around fish.
  4. 4Mix Parmesan, melted butter, and red chili flakes into a thick paste.
  5. 5Press Parmesan paste firmly onto tops of salmon fillets evenly.
  6. 6Bake 14-16 minutes until crust is golden and salmon flakes easily.
