Parmesan-Crusted Salmon with Spinach

Ingredients
- •4 fillets (6 oz each) salmon
- •3/4 cup Parmesan, finely grated
- •2 tbsp butter, melted
- •1/2 tsp red chili flakes
- •1/4 cup dry white wine
- •5 oz spinach, fresh
- •2 tbsp ghee or oil
Directions
- 1Preheat oven to 425°F and line a baking sheet with foil.
- 2Drizzle ghee over spinach on baking sheet, season with salt and pepper.
- 3Nestle salmon fillets over spinach and pour white wine around fish.
- 4Mix Parmesan, melted butter, and red chili flakes into a thick paste.
- 5Press Parmesan paste firmly onto tops of salmon fillets evenly.
- 6Bake 14-16 minutes until crust is golden and salmon flakes easily.
