Pastel de Choclo
A comforting Latin American casserole with savory meat filling topped with a golden, creamy corn crust.

Ingredients
- •2 tablespoons olive oil
- •1 pound ground beef
- •1 medium onion, diced
- •2 cloves garlic, minced
- •1/2 cup sliced black olives
- •2 hard-boiled eggs, sliced
- •1 teaspoon cumin
- •to taste salt and pepper
- •3 cups fresh corn kernels
- •1/2 cup milk
- •2 tablespoons butter
- •1/4 cup grated Parmesan cheese
Directions
- 1Heat olive oil in a large skillet over medium heat. Add ground beef, breaking it apart as it cooks until browned, about 5 minutes.
- 2Add diced onion and garlic to the beef, cooking until softened, about 3 minutes. Stir in cumin, salt, and pepper.
- 3Transfer the meat mixture to a 9x13 inch baking dish. Scatter black olives and sliced hard-boiled eggs over the meat.
- 4Blend corn kernels with milk and butter in a food processor until smooth with some texture remaining.
- 5Stir Parmesan cheese into the corn mixture and season with salt and pepper to taste.
- 6Spread the corn topping evenly over the meat filling.
- 7Bake at 350°F (175°C) for 30-35 minutes until the corn top is golden brown and set.
- 8Let rest for 5 minutes before serving.
