Ingredients
- •1 1/2 lb potatoes, peeled and sliced 1/4-inch thick
- •1 medium yellow onion, thinly sliced
- •1 green bell pepper, thinly sliced
- •1 red bell pepper, thinly sliced
- •1/4 cup olive oil
- •2 cloves garlic, thinly sliced
- •1 tsp salt
- •1/4 tsp black pepper
- •2 tbsp fresh parsley, chopped
Directions
- 1Heat olive oil in a wide covered skillet over medium-low and add potatoes, onion, peppers, garlic, salt, and black pepper.
- 2Toss gently, cover, and cook 15 minutes, stirring every 5 minutes so the vegetables soften evenly without scorching.
- 3Uncover, raise heat to medium, and cook 10–12 minutes more until the potatoes are tender and lightly golden at the edges.
- 4Drain off any excess oil if needed, fold in parsley, and serve warm.
💡 Keep the first half of the cooking gentle and covered; the potatoes should become tender before you uncover them to build browned edges.
