Ingredients

  • 1 1/2 lb potatoes, peeled and sliced 1/4-inch thick
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup olive oil
  • 2 cloves garlic, thinly sliced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

  1. 1Heat olive oil in a wide covered skillet over medium-low and add potatoes, onion, peppers, garlic, salt, and black pepper.
  2. 2Toss gently, cover, and cook 15 minutes, stirring every 5 minutes so the vegetables soften evenly without scorching.
  3. 3Uncover, raise heat to medium, and cook 10–12 minutes more until the potatoes are tender and lightly golden at the edges.
  4. 4Drain off any excess oil if needed, fold in parsley, and serve warm.

💡 Keep the first half of the cooking gentle and covered; the potatoes should become tender before you uncover them to build browned edges.
