Patatas Bravas
Crispy fried potatoes smothered in a spicy tomato sauce and creamy aioli, a beloved Spanish tapas favorite.

Ingredients
- •2 lbs potatoes, cut into bite-sized cubes
- •1 cup mayonnaise
- •4 cloves garlic, minced
- •1 can (14 oz) crushed tomatoes
- •2 tablespoons tomato paste
- •1-2 teaspoons paprika or cayenne pepper
- •1 tablespoon red wine vinegar
- •2 tablespoons olive oil
- •to taste Salt and pepper
- •Oil for frying vegetable or olive oil
- •2 tablespoons fresh parsley, chopped
Directions
- 1Heat oil for frying in a deep pot to 350°F. Fry potato cubes in batches until golden and crispy, about 8-10 minutes total. Drain on paper towels and season with salt.
- 2Make the spicy tomato sauce by heating 2 tablespoons olive oil in a saucepan over medium heat. Sauté minced garlic until fragrant, about 1 minute.
- 3Add tomato paste to the garlic and cook for 1 minute, then stir in crushed tomatoes, paprika, vinegar, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
- 4Prepare the aioli by mixing mayonnaise with minced raw garlic, a pinch of salt, and cayenne pepper if desired.
- 5Arrange fried potatoes on a serving plate. Drizzle generously with the spicy tomato sauce and dollop with garlic aioli.
- 6Garnish with fresh parsley and serve immediately while potatoes are still warm.
