Ingredients

  • 3 tablespoons butter
  • 1 large onion, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 medium potatoes, boiled and mashed
  • 1 cup green peas
  • 1 cup cauliflower florets, boiled and mashed
  • 1/2 cup carrots, boiled and mashed
  • 2 tablespoons pav bhaji masala powder
  • 1 tablespoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons tomato sauce
  • 4 pav (bread rolls)
  • salt to taste salt

Directions

  1. 1Heat 2 tablespoons of butter in a large pan over medium heat and sauté the chopped onion until golden brown.
  2. 2Add ginger-garlic paste and cook for 1 minute until fragrant.
  3. 3Add all the mashed vegetables (potatoes, peas, cauliflower, and carrots) and stir well.
  4. 4Sprinkle pav bhaji masala, red chili powder, and turmeric powder, then mix thoroughly for 2-3 minutes.
  5. 5Add tomato sauce and salt to taste, continue cooking and stirring for 5-7 minutes until the bhaji becomes creamy and well-combined.
  6. 6Slice the pav rolls horizontally and toast them on a griddle with remaining butter until golden.
  7. 7Serve the hot bhaji topped with a knob of butter, sliced onions, and fresh lemon juice alongside the buttered pav.
